Vi's Hearty Tarty Dill Pickles
Ingredients
Wings:

4 pounds chicken wings, split at the joints, wingtips removed

2 tablespoons rice flour

3/4 teaspoon salt

1/2 teaspoon cracked black pepper

1 teaspoon garlic powder
Vi’s Pickle Co. Hella Hot Sauce:

Brine from 1 jar of Vi’s Pickle Co. Hella Hot Pickles

1-2 tablespoons fish sauce
Instructions

Preheat your oven to 425°F and position the oven rack in the upper-middle slot.

Line a baking sheet with aluminum foil and place a wire rack on top. Spray the rack lightly with non-stick cooking spray.

Pat the chicken wings very dry with paper towels, this helps them crisp up in the oven. Transfer to a large bowl.

In a small bowl, mix the rice flour, salt and and garlic powder. Toss wings into bowl to evenly coat the wings.

Arrange the wings in a single layer, skin-side up, on the prepared rack.

Bake, turning every 20 minutes, until the wings are golden brown and crispy. Depending on their size, this may take up to 1 hour.

Remove from the oven and let them rest for 5 minutes.
To Make Vi’s Pickle Sauce:
In a small saucepan over medium heat, combine the pickles, Hella Hot brine, and fish sauce. Stir until well mixed and the sugar from the brine is fully dissolved into a glaze.
Remove from heat and let the sauce cool to room temperature before tossing with the wings. (You can also prepare the sauce ahead of time and refrigerate it until ready to use).
Serve:
Toss the crispy wings in Vi’s Pickle Sauce and serve immediately. Prepare for bold, spicy, and pickle perfection!
NOTE:
If you have an extra jar of brine, you can marinate the wings in the brine for up to 24 hours.
